Advanced Cheese-Making

Welcome to the wide, weird world of hard cheeses!  

Have you ever noticed at your deli or cheese counter that almost all of the cheeses have the same ingredients?  Milk, cultures, rennet and salt… That’s it!  That’s the entire ingredient list for swiss style cheeses, cheddars, feta, havarti, goudas and countless others.  So why are they all so different? 

This class will uncover the methods behind the lovely hard cheeses we all adore.  Whether you’ve taken our basic cheese-making class or not, this workshop will lay an even more comprehensive foundation for the home cheese-maker, and prepare you for making hard cheeses successfully at home. 

Hard cheeses are not necessarily more challenging to make, but the risk and reward factors are much higher than with a fresh cheese.  Who wants to baby along a wheel of cheese for months on end only to get a disappointing result?  This workshop will go over the reasons behind some common problems, as well as offer strategies, tips and tricks to avoid them.
